Ostra Bora

Ostra Bora is the essence of the Sacca degli Scardovari. We are located in Veneto, within the Po Delta Regional Park, an area of outstanding environmental value and a UNESCO Biosphere Reserve. The oysters are farmed in lantern nets suspended just below the water’s surface, allowing waves and wind to naturally polish the shells. They are then refined in New Zealand baskets, enabling a further phase of finishing and strengthening of the nacre. The oyster presents a very hard, thick, and well-shaped shell. The meat is generous and should be savored slowly to fully appreciate its nuances. On the palate, it is notably sweet, with a lingering vegetal finish and a delicate hint of nuts.
